Mock-O-Bell Quesadillas
A slimmer version of a fast-food favorite! These quesadillas are creamy with a bit of a kick. Win your man over to the low-carb, THM way of eating with this meal! This is especially tasty paired with a side salad or some crudites and ranch.

  1. Blend the mayo, ranch, chili powder and jalapenos until smooth to create your sauce. I like to add about 4 pickled jalapeno slices along with a dash of the “juice” from the jar. It gives the sauce just a little kick. If you want yours more or less spicy, adjust the number of peppers. Preheat a skillet over medium-high heat. Melt about 1 T. Butter. Lay a tortilla on the skillet and place cheese, chicken and the sauce on top. Place the other tortilla on top. Fry until golden brown, then flip. When the whole quesadilla is golden brown, it’s time to eat! We top ours with salsa, sour cream, and guacamole. Yum!
